Welcome to April’s recipe round-up! All the good stuff we posted in April and some extra bits and pieces that have nothing to do with recipes that I just want to tell you.
So….I’ve been making quite a few desserts lately for the blog, and of course Jaye and I can’t eat it all, so we try and distribute it among friends, family, co-workers. Jaye has been taking cupcakes and cookies and giving them to the security guards at work, who have been most appreciative!
Whenever I go and visit my sister I take her a selection of goodies, whatever’s on hand. And we have this running joke where I’ll hand over some really decadent dessert and say: ‘It’s vegan so it’s really really good for you!’ And we’ll both burst out laughing.
Because there is this perception that you can add a word like ‘vegan’ or ‘gluten-free’ or whatever to something and that means it’s super healthy. No, it just means it’s vegan, or gluten-free. But it also doesn’t mean it’s not healthy.
Where I’ve landed on this point (after many years of seeing things quite differently) is that there is no such thing as ‘healthy’ or ‘not-healthy’ when it comes to food. Because it’s about balance.
Fruits and vegetables are very good for you, but when I spent 4 years eating them exclusively, I became unhealthy. Because there wasn’t any balance.
There is space for some ‘pleasure’ foods in life. Foods that you eat for no other reason but that they taste good. Really… the entire point of desserts.
You’re not eating them for their vitamins or whatever, you’re just eating them for fun. In fact I’d go so far as to say that this is entirely necessary to a balanced life and a good relationship with food. Which is key to good physical and mental health.
So that being said let’s take a look at what we did in March! Some fabulously healthy food and some purely for pleasure food too!
1. Cashew Cheese Sauce // 2. Vegan Blueberry Muffins // 3. How to make Almond Milk // 4. Vegan Gingersnap Cookies // 5. Thin-Crust Hawaiian Vegan Pizza // 6. Vegan Lemon Pie // 7. Almond Butter Overnight Oats // 8. Peanut Brittle
I’m totally mad about the thin-crust pizza, in fact we’re having it for dinner tonight! This time with loads of mushrooms for a vegan funghi pizza! It’s just the best thing ever. And you can’t beat the cashew cheese for a pizza topping too! Though tonight I’m going with some store-bought pizza style vegan cheese. And dessert wise, that peanut brittle is simply amazing – crunchy, sweet, slightly salty and divine.
COMING UP IN MAY!
We’ve got some awesome recipes in store for May! Here’s a sneak peek at two of them! Lemon Cupcakes and Kahlua Coffees!
WHAT WE’RE WATCHING
We just watched the first 3 episodes of ‘The Handmaid’s Tale‘. And we would have watched more except 3 episodes is all that’s out so far! Wow! What an incredible new show. Based on the novel by Margaret Atwood. I’ve read some Margaret Atwood (mostly at University) but never read this one. This is compelling TV – but grim, harrowing, the stuff of nightmares too. In fact I think I did have a few nightmares last night!
One of my sisters (I have 3) can’t handle watching grim stuff, so this is a show that I would definitely tell her NOT to watch, but for everyone else, watch it. It’s soooo good. And then for some light entertainment we’re watching ‘Crazy Ex-Girlfriend‘ on Netflix, which is pure fun.
We also watched the documentary series ‘Hot Girls Wanted: Turned On‘ on Netflix. This is a must-see! It’s continuing with the same themes explored in the 2015 documentary film ‘Hot Girls Wanted’ that specifically focuses on the amateur porn industry. The series expands on this theme to include the ways technology/the internet is changing how we live, many times in negative ways. Highly compelling! I recommend you watch the documentary film as well as the series. Both on Netflix.
I finally got to watch Embrace, this is the documentary created by Taryn Brumfitt. A few years ago Taryn shared a before and after photo on facebook. Except her ‘after’ photo was what people are used to seeing as the ‘before’. Her ‘before’ photo showed her on stage competing in the bikini division of a figure competition, looking like the epitome of ‘the perfect body’. And then her ‘after’ photo showed her a couple of years on, softer, fuller figured.
The image went viral and was seen by over 100 million people worldwide. This sparked an international media frenzy! And this inspired Taryn to create the film ‘Embrace’. I absolutely LOVED this film! I had a screening at my house with my mom and sister while my mom was here visiting. We had the popcorn and the snacks and we definitely got all the inspiration that this film intended! Which is heaps! Watch it, and then watch it again with all your girlfriends, you will be so glad you did!
WHAT WE’RE READING
I just finished reading ‘I Can Barely Take Care of Myself: Tales From A Happy Life Without Kids‘ by Jen Kirkman. I LOVED this book. Super funny and relatable, and I think it would be for anyone, not just those without kids! Highly recommended.
And then I just received ‘The Juice Lovers Big Book of Juices‘ by Vanessa Simkins. I must just tell you that Vanessa and I have been friends since 2009 and she sent me a complimentary copy of her gorgeous book. But as always and forever more, my opinions are entirely my own! This is a book I would have been very happy to pay for, it’s incredible value, beautifully put together and quite honestly – enormous! If you like juicing, then you will be thrilled, so many awesome ideas in here, and 425 recipes! I’m looking forward to trying out a lot of her recipes! Good times ahead!
Now I’m on the hunt for a new book, any recommendations? Post them in the comments!
FRANKIE AND ERNIE – ‘THE KIDS’
Frankie and Ernie have this habit lately, where if they think I’m sleeping too late in the morning they come in and pull the curtains open so that it shines right on my face. And the Dubai sunlight is bright! And if that doesn’t do the trick then they come and jump on my head. Eish. The things you get away with when you’re this cute.
Hope you’ve had a lovely April! Chat soon!
