Description

This vegan chocolate bark is rich, crunchy, salty and sweet. Just 3 ingredients and 15 minutes to the best vegan bark ever!

Ingredients

  • 18oz (500g) Vegan Chocolate or Chocolate Chips (~3 cups)
  • 1 cup (150g) Raisins (Small, Seedless)
  • 1 cup (150g) Mixed Nuts (Roasted and Salted)

Instructions

  1. Break up the chocolate and melt it in a microwave safe bowl. Microwave for 30 seconds at a time, bringing it out to stir every 30 seconds until the chocolate is melted and smooth.
  2. When the chocolate is melted, throw in roughly two thirds of the mixed nuts and raisins and mix together.
  3. Pour the mix out onto a parchment lined baking tray, and smooth it out.
  4. Sprinkle the remaining mixed nuts and raisins on top.
  5. Place into the fridge and allow to set for around 1 hour.
  6. Break into pieces and enjoy!

Notes

*Vegan Chocolate: You can use any high quality vegan chocolate bars (broken up before melting) or vegan chocolate chips. Make sure it’s good tasting and melts down well. Generally in order to melt down well cocoa butter should be prominently listed in the ingredients.

*Roasted, Salted, Mixed Nuts: The roasted, salted nuts contrast wonderfully with the sweet chocolate and raisins in this recipe. Use any type of nuts you like, or any mix of them. If you don’t like to combine salty and sweet flavors then you can use plain unsalted nuts.

*Raisins: The raisins should be small and seedless for this recipe. Alternatively you could use dried cranberries or any other dried fruit.

*Storing: Keep your bark stored in the fridge in a covered container for 2 weeks. You can also store it at room temperature, if the weather is cool. It can tend to get fairly soft at room temperature though so keeping it in the fridge is best.
