Description

Easy and delicious veggie fajitas! Sautéed veggies plus salsa, guacamole and vegan sour cream in a tortilla is always going to be a winner! These vegan fajitas are filling, satisfying and make a fabulous plant-based dinner.


Ingredients

For the Tomato Salsa:

  • 4 Tomatoes
  • 1/2 cup Cilantro (Chopped)
  • 1/2 Onion (Chopped)
  • 1/2 tsp Crushed Garlic
  • 1 Tbsp Lime Juice (freshly squeezed)
  • 1 Tbsp Olive Oil
  • Sea Salt and Black Pepper (To Taste)

For the Guacamole: 

  • 2 Avocados
  • 1 Tbsp Lime Juice (Freshly Squeezed)
  • Sea Salt and Black Pepper (To Taste)

For the Sour Cream:

For the Sautéed Veggies:

  • 3/4 Onion (Chopped)
  • 1 tsp Crushed Garlic
  • 1 Tbsp Olive Oil
  • 1 15oz (425g) Can Black Beans (Drained)
  • 1/2 tsp Cumin
  • 1/4 tsp Cayenne Pepper
  • 1/2 tsp Paprika
  • 2 Small Zucchini (Sliced)
  • 1 Carrot (Sliced into strips)
  • 1 Pack Button Mushrooms (~8oz/226g)
  • 1 Green Bell Pepper (Sliced into strips)
  • Sea Salt and Black Pepper  (To Taste)

For the Tortillas:

  • 8 Tortillas (Wheat or Corn)

For Serving:

  • Lime Wedges

Instructions

  1. Prepare your tomato salsa. Chop the tomatoes and add to a bowl with the chopped cilantro, onion and garlic and mix in. Add the lime and olive oil and a little sea salt and black pepper.
  2. Prepare your guacamole. Mash the avocados and add in the lime juice and salt and black pepper to taste.
  3. Prepare your sour cream. Make up a batch of vegan sour cream.
  4. Prepare your sautéed veggies. Add the onion and garlic to a pan with the olive oil and sauté until the onions are softened. Add in the black beans and spices and sauté for a minute. Then add in all the chopped veggies and cook until slightly softened but still a little al dente. Add sea salt and black pepper to taste.
  5. Prepare your tortillas. While your veggies are sautéeing, wrap your tortillas in foil and place into the oven for 15 minutes at 285°F (140°C) to heat through.*
  6. Take everything to the table so that fajitas can be assembled to everyone’s taste. Serve with lime wedges.

Notes

*Check the package directions for your tortillas for heating instructions, they can differ from brand to brand. Over-heating them can cause them to become brittle and breakable.

*Use corn tortillas if you want this meal to be gluten-free.
