    Vegan White Russian

    Vegan White Russian

    This vegan white Russian is made with coconut cream for a vegan take on the classic drink. Creamy and delicious.

    I was listening to this excellent Ted talk the other day about how (and why) dieting doesn’t work. And in this video she mentions the four things that are proven to most benefit our longevity.

    And if these four things are done then life expectancy is equally high across the spectrum of body weight.

    And these four things are: fruits and vegetables, exercise, not smoking and moderate drinking.

    So the first 3 are easy, I love fruits and veg, love movement (mostly, sometimes) and I quit smoking in 2004. But I just had to ask Jaye – do we have to start drinking more so that we drink moderately?

    Ha! Cos our alcohol consumption tends to get measured more in units per year, not units per week. But looking into it – nah, if you don’t drink much or at all, there’s no reason to start. But if you do drink a bit, then moderation is the key.

    One of the things we do like to drink is a vegan white Russian.

    When Jaye first made me one of these I actually couldn’t believe how good it was. It’s the perfect after-dinner cocktail because it’s almost more like a dessert. It’s creamy, dreamy and just divine.

    What Goes Into A White Russian Cocktail:

    Ingredient Notes

    • Kahlua – we used kahlua but you could also use any coffee liqueur.
    • Vodka – you can use any brand of vodka that you like but ideally a high quality vodka. We used Absolut Vodka.
    • Coconut cream – should be canned and unsweetened. You could also use full fat, canned, unsweetened coconut milk. If you have an issue with coconut then you could switch this for a different vegan cream or make our vegan heavy cream substitute (cashew based) and use that instead.

    How To Make A Vegan White Russian

    You will find full instructions and measurements in the recipe card at the bottom of the post. This is a summary of the process to go along with the process photos.

    • Add ice to a glass. Pour kahlua into the glass followed by vodka.

    • Pour the coconut cream carefully over the back of a spoon so that it forms a layer on top.
    • Your drink is ready to serve!

    To Swirl Or Not To Swirl

    As pretty as the cream layer on top looks, it’s better to swirl the drink a bit so that you mix everything up a little. Otherwise your first sip will tend to be just cream. You want to get all the flavors mixed.

    Ingredients
