    Vegan Apple Bread Recipe

    This scrumptious vegan apple bread will be your new favorite! Bursting with fresh apples and spices, the perfect treat for any time of day.

    I really loved developing this vegan apple bread recipe.

    I enjoyed our vegan apple cake and vegan apple crisp so much that I thought, why not try and make vegan apple bread too?

    The best decision ever! But if you thought the vegan apple muffins were easy to make, this apple bread is way easier!

    When baking this apple bread, the smell of apple and cinnamon will fill your house. And it will taste even better!

    This vegan apple bread recipe is so easy to make, the hardest thing about it is waiting for the glaze to set! Using some basic ingredients, fresh apples, and, of course, warm and fall-inspired spices, it makes such a delicious breakfast or can even be enjoyed as a snack!

    Ingredients Notes

    Granny Smith apples. These are the best apples to use in this recipe, but you can also use whatever you have on hand.

    Vegan Buttermilk. We used our quick and easy vegan buttermilk recipe. Just add 1 Tbsp fresh lemon juice to a measuring jug and then add soy milk to the 1 cup (240ml) line. Leave it for a minute to allow it to curdle.

    The glaze. If the glaze is too thick to drizzle, you can add more soy milk or another non-dairy alternative a little bit at a time. If the glaze seems too runny, add powdered sugar until it’s thick enough to drizzle and not run over the bread entirely.

    How to make Vegan Apple Bread

    You will find full instructions and measurements in the recipe card at the bottom of the post. This is a summary of the process to go along with the process photos.

    • Add the chopped and peeled apples to a mixing bowl with the brown sugar and cinnamon and toss together so that all the apple pieces are coated. Set aside.
    Add chopped apples, brown sugar and spices to a mixing bowl and mix.
    • Sift the all purpose flour into a mixing bowl, add the cinnamon, nutmeg, baking powder, and salt, and mix. Set aside.
    Dry ingredients mixed into a separate bowl.
    • In the bowl of your stand mixer, add the vegan butter and white granulated sugar and cream them together.

    • Add the vanilla extract and vegan buttermilk and mix in. This mixture will look curdled and lumpy, but don’t worry, this is fine.

    • Add your dry ingredients to the wet and mix in by hand until combined. Don’t over-mix.

    • Add the chopped apple mixture and fold in until just mixed.

    • Transfer the batter to a prepared 9×5 loaf pan with parchment overhang and smooth down.
    • Place into a preheated oven and bake at 350°F for 60 minutes.

    • Remove from the oven and lift the apple bread from the pan, using the parchment paper overhang, and place it onto a wire cooling rack to cool completely.
    • Prepare the glaze and drizzle over the top of the cooled bread and put it in the fridge for 5 minutes to set before slicing.

    Recipe Success Tips

    Cut your apples into ½ inch pieces. Not only does this size seem to be the best size for the apples to cook all the way through, but it also helps them retain their structure. As a result, they are super delicious and prominent in this recipe.

    The apple mixture. The mixture you make beforehand with the apples and spices draws out some moisture in the apples, creating this beautiful tasting and smelling sauce that adds so much to this recipe. So, pour the entire mix in!

    Weigh your flour for the most accurate results in this recipe. If you don’t have a food scale,  make sure you use the spoon and level method for measuring flour which is the most accurate way to measure flour when using cups. Spoon the flour into your measuring cup, then level off the top with a knife. Don’t scoop it, and don’t pack it into the cup.

    What else can be added to this apple bread?

    Nuts are a great option to add to this apple bread! Add in a half cup of chopped walnuts or pecans, dried cranberries, or raisins. Keep any add-ins to around a cup in total.

    Can I make this vegan apple bread recipe gluten-free?

    If you’d like to make this apple bread gluten-free, then use a gluten-free all-purpose flour blend. Something like Bob’s Red Mill Gluten Free All Purpose Baking Flour would work well. However, it must be a blend that is meant to replace regular flour in baking. Don’t use something like coconut flour, as that will not work well.

    Storing and Freezing

    Storing. Keep it in an airtight container at room temperature, and it will stay fresh and delicious for a few (3-4) days. It can also be stored in an airtight container in the fridge for up to a week.

    Freezing. This vegan apple bread is totally freezer friendly for up to 3 months! Just be sure to put it in either an airtight container or a Ziplock bag. When ready to enjoy, leave it to thaw in the fridge overnight.

    Ingredients

    Apple Mixture:

    • 1 and ½ Cups Granny Smith Apples (188g), peeled & chopped into ½ inch chunks
    • ⅓ Cup Light Brown Sugar (67g)
    • 1 and ½ teaspoons Ground Cinnamon

    Batter:

    • 2 Cups All Purpose Flour (250g)
    • 1 teaspoon Ground Cinnamon
    • ½ teaspoon Ground Nutmeg
    • 3 teaspoons Baking Powder
    • ½ teaspoon Salt
    • ½ Cup Vegan Butter (122g)
    • 1 Cup White Granulated Sugar (200g)
    • 1 teaspoon Pure Vanilla Extract
    • 1 Cup Vegan Buttermilk (240ml), 1 Tbsp Lemon Juice + Soy Milk up to the 1 cup line

    Glaze:

    • 1 Cup Powdered Sugar (120g)
    • 1 and ½ Tablespoons Soy Milk or other non-dairy alternative

    Instructions

    • Preheat the oven to 350°F (180°C) and spray a 9×5 loaf pan with nonstick spray. Line it with parchment paper so that the parchment paper hangs over the sides, so that when the apple bread is baked, you can easily lift it out of the loaf pan using the parchment paper.
    • Add the chopped apples to a mixing bowl with the brown sugar and cinnamon and toss together so that all the apple pieces are coated. Set aside.
    • Sift the all-purpose flour into a mixing bowl, add the cinnamon, nutmeg, baking powder, and salt, and mix. Set aside.
    • To the bowl of your stand mixer, add the vegan butter and white granulated sugar and cream them together.
    • Add the vanilla extract and vegan buttermilk and mix in. This mixture will look curdled and lumpy, but don’t worry, this is fine.
    • Add your dry ingredients to the wet and mix in by hand until combined. Don’t over-mix.
    • Add the chopped apple mixture and fold in until just mixed.
    • Transfer to your prepared loaf pan and smooth down.
    • Bake for 60 minutes or until a toothpick inserted into the center comes out clean.
    • Lift the apple bread from the pan with the parchment paper overhang and place it onto a wire cooling rack to cool completely.
    • When your bread has cooled completely, prepare the glaze by adding the powdered sugar and soy milk to a bowl and mixing until smooth.
    • Drizzle the glaze over the top of the bread and put it in the fridge for 5 minutes to set before slicing.

    Notes

      As always, your recipes yielded a perfect product!

      I made a few slight changes just for preference in what I was aiming for in the final product. I layered half of the apples in the prepared pan after laying down half the batter (half batter, half apples, slightly swirl in apples into batter with knife, repeat), rather than mixing the apples throughout the whole batter. I also added a streusel topping to make this apple bread extra special. I found that I had to bake it for 70 minutes, maybe due to how I distributed the apples. It turned out PHENOMENAL! Thanks for this amazing recipe!5 stars

      This is the most delicious recipe! Holy cow! Thank you for sharing it. I didn’t even put the icing on! I made 3 mini loaves because those are the only loaf pans I have. I used the same temperature but reduced the baking time, using the toothpick method to test doneness. Perfect for a rainy fall morning. The house smelled divine5 stars

      i always try to do something a little different, so is it possible that the quantities of cinnamon and nutmeg can be changed, as i much prefer the taste of nutmeg with apple (Mrs Beeton option). also i get a little fed up with it always being both cinnamon and vanilla in nearly everything, so i’d love a change from this too, if possible. could you advise something else, or even missing the vanilla altogether ?!?! would lemon work instead ?!?!?4 stars

There can be a few reasons why it turned out that way, like if you cut your bread while very warm, it would crumble and fall apart or if you didn’t measure the vegan butter or baking powder properly your bread could be crumbly too. When you do try again, let us know how it turns out! 🙂

        We haven’t tested baking in a toaster oven before. I’d say you would have to test it out and see how it goes. You would have to try it out to get the perfect time and temperature to get the best result possible. Hope it turns out well for you Norma!

      I have made so many of your recipes and they all come out perfect. Especially the vegan feta cheese, I was not sure how it will turn out, but it came out so perfect as if it is real (milk based) feta cheese. This recipe came out on a perfect time. I will be making this definitely.
