So there I was….browsing the web trying to decide what to call my gorgeous green mint shakes.
And then I see that shakes remarkably like these are often called shamrock shakes!
And it’s perfect for St Patrick’s Day. Which of course is long past now, so I totally missed that boat.
I mean I did manage to get something green up, my mint chocolate chip ice cream which is the bomb diggity!
But I wish I’d hustled a bit more to get these vegan peppermint milkshakes out in time. I could’a called them Shamrock Shakes!
Vegan peppermint milkshakes sounds pretty good too.
These shakes are gorgeous, green, thick, cold, smooth and ultra satisfying!
It’s a simple 4-ingredient recipe that can be topped with whipped coconut cream and some green sanding sugar for a bit of extra flair!
Believe me when I say I have NO idea of where or even if you can get green sanding sugar where I am, so I made my own.
Just threw in a few drops of green food coloring with some white sugar and processed it in the food processor.
It clumped at first, so I had to break up the little green clumps and then the green color spread beautifully.
So if you need to make colored sanding sugar at any point, this is what I recommend!

- Place the ice cream, soy milk, peppermint extract and green food coloring into the blender and blend.
- Pour out into glasses and top with whipped coconut cream and some green sanding sugar.
- Serve immediately.
*Prep time does not include making the sanding sugar or whipping the coconut cream.
